I've got a shot at several Fanuc MPG's pretty cheap.
I am asking if any of you folks know if Fanucs are typically 5V.......or ?

Fanuc are principally 5vTTL , some models are single ended, A & B,  some have differential, both can be used in the single ended mode.
There are some Mits/Mazak out there that are 12vdc supply with 5v signal.

I picked up a Fanuc MPG the other day. very cool. runs off 5V and has 2 outputs produces 4.2V square waves 180 deg apart. I found this page that details it.

Now I just need to figure out how to interface it to Mach?

The standard is 90° apart, Hence quadrature pulses. The PDF confirms this.
