Looking for info on what would be involved to change a router from NC Studio to Mach 3.

Know nothing about NC Studio.
Provide a link for info on  NC Studio, machine type, and controller type and maybe some will have a look  and give some high level guidance.

The controlling program uses a dedicated card. So to change over you would use the PP (or something like the Smootstepper ) and use Mach as the controlling program.
