Going to do a clean install on a new old computer, no i'net access or network. Dedicated to Mach 3 only. Should I use the original pre service pack XP which is fast & unbloated or should I go to SP3 and install all the latest updates? It's a P4 2gHz 2GB RAM

In my opinion...

If it's a PC which is dedicated to the machine then just install XP and forget about any updates. If you are going to be running the later Mach3 plugins (such as Klaus's video screen) then you may need to install the SP3 but again forget about the updates.

A lot of more modern software requires SP3, but if you're just running Mach3, you don't need to change anything.
I install from an XP SP2 disk, and don't do any updates.

I'm looking at getting a CNC parts router kit and they support running the machine from Mach3. So I'm going to buy a dedicated PC to run the router table. Found a machine local, it is XP with SP1 to 3 installed. If it is not going to be connected to the net so what ever " bloat" in the service packs should not be an issue?

The PC in general exceeds the min requirements P-4 @ 3.4 Ghz, 1 Gig ram and an off board Radeon x300 graphics card with 128 Megs of ram and twin monitor support. Anyhow one question is about the ram, I know from video editing software that just meeting the min requirements comes at a performance price. Would more ram be helpful or useless to Mach 3?

Service packs are not an issue.

1 GB of RAM is plenty for Mach3.

Mach3 was originally written when 256MB was common in PC's.

On my PC, with XP and Mach3 running, the PC uses less than 70Mb of ram.

I do want to use the video camera center finder at some point, and I have a Vistacnc MPG that I haven't installed. .
