how do you guy secure your material to the table if your cutting out a piece?

can you elaborate slightly? Do you mean if you are cutting right round the material or do you mean if you are cutting your part out of the inside of the material?

I try to use a vise where possible, but when the stock is too big for that, I generally use one of the clamping kits that just about any tool supply house sells.  In those cases I'll either clamp the stock directly to the table or with the stock sitting on 2 or more 1-2-3 blocks if the work will be milled or drilled all the way through and there is a chance that the cutter could hit the top of the table.  A tooling plate can also be handy for repeating jobs.
