Probing with G31 uses only the variables 2000 for X and 2001 for Y ??? (I reach them with #2000 from within the Gcode program, right?)

What about Z?

Z is DRO 2002, A is 2003, etc.

After successful probing, PARAMETERS 2000 to 2005 (X,Y,Z,A,B,C) will be set to the coordinates of the
location of the controlled point at the time the probe tripped
