New to this space, thank you all!

We have a CNC router online now with M3/ Cambam/ LazyCam.  I would like to implement a project next week that gets students to cut out single lines of MDF text with the router.  What is a suggested workflow that is simple enough for students to get into and that uses univ. library computer software or freeware?  I could also work them through our laptop to generate files, but don't know the first place to look regarding CAD text.  Any help here is HUGE!  Thanks again for all the great advice posted here.

You could use the text wizard available in Mach, or Lazycam, or even Cambam to generate the gcode for the text.
Most Cad programs provide for text and you can save the text as a dxf file and import that into LazyCam or Cambam to generate the gcode.
"EVERY GOOD PERSON DOES FINE" to be politicaly correct these days comes to mind!

BTW....Probably easier to download DeskEngrave from the internet, which is free, and it will produce the code. No learning curve ....even a
caveman can use it!

Another, relatively new, free, software you may wish to consider is F-Engrave http://home.comcast.net/~sskroch/Fengrave/fengrave.html
This can import any / all of the Windows TTF fonts and is excellent, not just for engraving and V-Carving but also profile cutting etc.
