Is there a way to jog Z while cutting a file ?

Not really although you may be able to set it up if you use plasma and use the THC function. You should then be able to jog the Z within the values you have set.

What I mean is you may be able to use a plasma profile.

The Thc up/down move is really an uncontrolled move not a precision jog move.
