I've had a chance of plan... I was originally going to buy a laptop for running my bridgeport, but I've decided now to use my old desktop PC. It saves me money for a while, and it's a known quantity...I could buy a cheap laptop from a well known auction site but it'd be an unknown - and I've been there before.
So as I need to buy a new monitor for it, what's the smallest size one can realistically get away with?

You really want a resolution of 1024x768

As a minimum? I'm just looking at a couple of cheap 15" monitors and they seem to be over 1366x768 in any case.

Yes, as a minimum. Most screensets don't work well with anything smaller.

Most screensets are done in 1024 x 768 ie 4:3 aspect ratio. I find it is therefore it is best to have a standard type monitor rather than a wide screen. Not so easy to get nowadays sadly unless buying second hand.
